Valentines Day Dinner

{It was so good, I forgot to take a picture of mine before boyfriend and I dug in...so here is a picture from Annie's eats...she must have alot more self control than I do}

I am horrible at cooking, so I was very impressed that I was able to cook a real meal. Like one that had steps and involved measuring ingredients {pretty legit, I know}. I even {wait for it...} improvised and added ingredients to the recipe and it still tasted good, no amazing. I got the recipe off of pinterest and its from annie's eats. Here is my version of the recipe with the steps I took to add the italian sausage.

Ingredients:
1 package of hot italian sausage (we used jennie-o)
2 tbsp. extra virgin olive oil
A big spoonful of chopped garlic
2-14 oz. cans diced Italian plum tomatoes
1 tsp. dried oregano
Salt & Pepper
1 lb. pasta (tubes)
8 oz. Shredded mozzarella cheese
2/3 c. parmesan

Directions
  • Cook sausage according to the packages instructions and set aside to cool off. When cook use a sharp knife to pierce the casing and peel off the skin. Once the sausage's casing is removed cut sausage into 1/2 inch thick disks and set aside.
  • Heat oil in skillet. Add garlic and cook over medium heat, 1 min. Add tomatoes and oregano and simmer rapidly, stirring occasionally until thickened, 15 min. Add S&P.
  • Meanwhile, cook pasta and drain. Toss pasta with sauce and stir in sausage disks.
  • Place half of pasta in an oiled 9×13” dish. Cover with half parmesan and half mozzarella. Top with remaining pasta, then parmesan and mozzarella. Bake at 400° for 15 minutes.
